Easy to make refreshing homemade blackcurrant cordial that will keep in the refrigerator for up to 1 month. Dilute to taste with still or sparkling water.
Wash 500g blackcurrants and remove from the stems and place them in a large saucepan. Add 250g sugar and 300ml water, then heat gently stirring until sugar has dissolved.
Continue to cook gently for a few minutes until the blackcurrants are very soft and have begun to burst, about 5 minutes. Stir in the juice of 2 lemons.
Strain the mixture through a fine sieve or coarse sieve lined with muslin. Allow to stand until all the juice has dripped through.
Pour into sterilised bottles. Seal and allow to cool then chill until required

To sterilise bottlesDepending on the lids you may be able to sterilise in the oven as for jam jars. If lids are unsuitable ie mine have plastic stoppers. submerge in water and boil for 5 minutes or use a sterlising solution. If you are likely to use the cordial with in 2-3 days you can skip sterlising the bottle just make sure they are scrupulously clean.Store in the refrigerator for up to 1 month
