  • 2 pork loin chops
  • salt and freshly ground black pepper
  • 1 tbsp extra virgin olive oil
  • 1 small onion chopped
  • 25 g fresh breadcrumbs
  • 25 g Emmental or gruyere cheese grated
  • 1 tsp dried sage


  • Preheat the oven to 200℃ (180℃ fan)/400°F/gas mark 6.
  • Season the pork with salt and pepper. Heat the oil in small frying pan and fry the pork over a high heat for 2 minutes each side until browned. Place in a single layer in a shallow ovenproof dish or baking sheet.
  • Add the onions to the pan and fry gently for 1 to 2 minutes until softened.
  • Mix together the onion, breadcrumbs, cheese and herbs until well combined.
  • Pile half the mixture on top of each of the pork steaks and press down gently.
  • Bake for 20 minutes until the pork is cooked and crumbs are crisp and golden.
