Instructions
Cook 400g (14oz) pasta in plenty of lightly salted boiling water for about 10-minutes or as directed on the packet.
Slice 6 rashers of bacon into small pieces, chop one small onion.
Heat the oil in a small saucepan and fry the onions until just beginning to soften. Add the bacon and cook for 3 to 4 minutes.
Stir in 175 g (6 oz) cheese and 100ml (3½ floz) milk and heat gently stirring until well combined. Season to taste with salt and pepper.
Drain the pasta and stir in the cheese sauce. Serve immediately sprinkled with parmesan cheese and chopped parsley, if desired.
