But first, as another month comes to an end, a quick recap of what's been happening here in May.
2020 is turning out to be a strange year indeed, with so many lows and too few highs. Pretty much any other year I would be saying by now, How can it be nearly June already!; every year seems to just pass quicker and quicker. It feels very strange to be feeling in many ways this year cannot go quick enough as we all long to see the back of this virus. How are you feeling?
Still, life does not stand still and we carry on with our new norm. I've got used to meeting friends on zoom for a weekly stitch and bitch session, as well as choir rehearsals, I wonder if next door has invested in earplugs for Wednesday evenings!
The sun has shown its face a fair bit, and it looks like we will go through May with no rain at all. I enjoy the peace of my tiny city garden and have finally made a start on a garden project I had been planning for some time, a mosaic garden table. Part one, the centrepiece is now complete and I'm really pleased with how it looks. It's slow and even in lockdown it will be sometime before its finished. Do you have a lockdown project?
and of course work on the blogs carries on as normal. A mixture of updating old posts such as this Rhubarb and ginger crumble and new recipes such as my sourdough pancakes on Only Crumbs Remain and Roasted cauliflower soup here on recipes made easy.
Enough about me, time to see what everyone else has been cooking.
Meat-free recipes for summer
So once again there were plenty of lovely recipes linked up on #CookBlogShare last week hosted by Louise at A Strong Coffee to choose from. With the rhubarb in full swing, there were several rhubarb recipes linked up Stewed rhubarb from a Baking journey, Vegan panna cotta with rhubarb from Family, Friends, Food and my own Rhubarb and ginger crumble. With the better weather some salad recipes have started to appear. This Easy beef salad with Asian slaw from Lost in Food looked particularly tasty. There also seems to be an increase in the number of vegetarian meals as we look for lighter dishes. I think even the most hardened meat eaters like to include more veggie based dishes in their diet in the summer and there are plenty to choose from.

A super quick, easy and tasty vegan main that can be on the table within twenty minutes.

Roasted aubergine with pomegranate molasses

Shakshuka
Delicious Shakshuka. A perfectly-spiced one-skillet North African meal of nestled baked eggs in tomatoes. Nutritious and beautiful. Breakfast/Brunch/Lunch.
I have a confession to make believe it or not I have never eaten Shakshuka I have wanted to and had intended to go out for brunch sometime to try it but just not got around. No excuses now I should make my own Shakshuka from the Gluten-Free Alchemist.
Pea and spring onion frittata
This pea and spring onion frittata is ideal for lunch or a midweek evening meal. Delicious served hot or cold.

Thank you for the meat free recipes, as a non meat eater I really appreciate that. Definitely that potato tart has my name on, never met a potato that I didn't like ! I have to say that I still miss the" new potatoes " that have been always available in the spring in the UK, living on Long Isand, New York the so called new pots are never new !

Sadly I think the same thing is happening here with new potatoes. You can't beat delicious Jersey royals when they come into season and I rarely see new potatoes with the unset skins that you scrape off. I grab them whenever I see them but in fact I think thanks to lockdown I may have missed them completely this year

I can not begin to tell you how pleased we are to be heading into summer after such a wet and stormy winter and with everything else it does help to lif our spirits. I guess you can enjoy meatfree meals at any time of the year too especially if it's not too cold!

Thank you for featuring our beef salad. The sun in shining today and I'm sat in the garden working and this round up has made me decide that it's a meat free dinner tonight! Some lovely recipes on here and I love aubergine so will have to try that. Very impressed with your mosaic table, what a beautiful addition that will be to your garden.

We certainly eat less meat in the summer and can tend to rely too much on meat in the winter. Its easy to do!
